Enjoy Mexican Street Food
One of my favorite dishes that will make you feel like you’re on vacation is elote, or Mexican street corn. It is corn on the cob smothered with a layer of mayonnaise, grated cheese, lime and chili powder. It’s damn delicious and super easy to make.
Corn or maiz, originated in Mexico and is an important part of Mexican cuisine. It has been a staple food since ancient Mesoamerica and was prominent in Mayan and Aztec culture. Today, corn is used for everything from hominy to masa for tortillas and tamales. So eating corn is clearly the best place to start your Mexican staycation.
